Cashew Nut Cookies Recipe/Mundhiri Paruppu Cookies Recipe/Cashew Nut Cookies with step by step photos

Today I am going to share a very nutty, crunchy, delectable and a traditional Cookie – none other than Cashew nut cookies. Ok, wait, did I write traditional, yes it is a traditional cookie of China. Cashew nut cookies are prepared in large batches for Chinese New Year and shared among friends and family. These cashew cookies are totally irresistible; you will never stop with one or two. Here’s how to make Cashew nut Cookies with step by step photos…

Ingredients
Unsalted Butter
2/3 cup
Caster sugar
¾ cup
Vanilla extract
1 tsp
Egg
1
Salt
1/8 tsp
All purpose flour/Maida
200 gms
Baking powder
½ tsp
Cashew nuts
200 gms
Cashew nuts [split]
50 gms

Method

Toast the cashew nuts:
Bake the untoasted cashew nuts at 160°C until it turns to golden brown color [approximately for 15 minutes].

Let the cashew nuts to cool thoroughly, grind it in the mixer to fine powder. Grinding it to coarse powder is also alright, they give a great texture to the cookies.


In a bowl sift together all-purpose flour and baking powder.

                                

Add the butter and sugar to another big bowl. Whisk it thoroughly with a hand or electric whisker until pale and fluffy.


Now add the egg, vanilla extract and salt. Whisk again until well blended and smooth.


Add the flour mixture, ground cashew nut powder and mix with a spoon. 


Make sure they mix evenly and you make non-sticky dough. If it is sticky sprinkle about 1-2 tsp of all purpose flour/maida and mix again.


Preheat the oven to 180 C/350 F for 10 minutes. Line the baking trays with parchment paper and keep them ready.

Dust some plain flour; roll the dough to about 4mm thickness. Cut the dough with cookie cutter.


Arrange the cookies on baking tray. Gently press one cashew halve onto each cookie.


Bake the cookies to golden brown colour for about 20 minutes. Remove cookies to wire rack and let it cool.


Traditionally these cookies are baked in the shape of cashew nuts but I made them with different shapes.


Enjoy the delicious and exotic cashew cookies with a cup of warm milk. Store the rest of the cookies in airtight container.
