Today I
am going to share a very addictive and tempting Carrot Cake not just that, this
cake is butter less. I know this month most of you will be baking lots of cakes
as X’mas is fast approaching. So, I wanted to share a healthy version of carrot
cake which you can try in your home. I have used chopped almonds to bake this
cake, since I had them handy in my pantry and they did taste great. You can as
well use walnuts which are always best paired with carrots in baking carrot
cakes.

how to make Carrot Cake with step by step photos…
Ingredients
All purpose flour/Maida
|
2 cups
|
Baking soda
|
½ tsp
|
Baking powder
|
½ tsp
|
Cinnamon powder
|
2 tsp
|
Nutmeg powder
|
¼ tsp
|
Salt
|
¼ tsp
|
Oil
|
¾ cup [180 ml]
|
Sugar
|
1 cup [200 gms]
|
Yogurt
|
¼ cup
|
Eggs
|
3
|
Vanilla extract
|
2 tsp
|
Carrots
|
2 cups grated
|
Almonds/Badam or Walnuts
|
½ cup finely chopped
|
Raisins
|
½ cup
|
Preparation
time: 20 minutes
Cooking
time: 40 minutes
Serves:
15-18 slices

Method
Preheat
the oven to 180 C. Grease two 8 inch cake pan with butter. Line the pans with
parchment paper as well. Chop
the nuts and keep them ready.
In a
bowl mix all purpose flour, baking powder, baking soda, salt, cinnamon powder,
nutmeg powder and sift it.
In
another bowl mix oil and sugar really well until well combined.
Add
yogurt and beat really well.
Now add
vanilla essence, eggs one at a time and beat really well.
Add flour
mixture, chopped nuts, raisins and mix with spatula.
Now add
the grated carrots and mix all of them together, do not over mix.
Pour
the cake mixture to the baking pans.
Bake it
in the oven for 35-40 minutes or until the toothpick inserted comes out clear.
Let the pan cool for 10 minutes.
Run a
knife around the edges of the pan and invert the cakes onto a wire rack or
plate and let it cool completely. Then place the cake bottom side up and remove
the parchment paper.
Super
delicious and healthy Carrot Cake is ready to be enjoyed. Enjoy the cake by
applying some frosting or just like that.
