Vegetable & Egg Pasta [Healthy Version with No Cheese & No Sauces]

Making Pasta need not always involve cheese in it; here is another healthy, quick and filling pasta dish without any cheese or sauces. Kids love to eat pasta, but the responsibility of making it healthy lies on us. This Vegetable and Egg pasta is one such dish with no cheese or white sauce, but loaded with vegetables and rich in protein  from eggs. Here’s how to make Vegetable & Egg pasta with step by step photos….

Ingredients
Pasta [Any pasta of your choice]
400 gms
Eggs
4
Onion
2 sliced lengthwise
Ginger
1 inch finely chopped
Garlic
6 cloves finely chopped
Green bell pepper
2 cut length wise
Red bell pepper
2 cut length wise
Dry red chilli flakes
1 ½ tsp
Mixed herbs [Italian]
1 ½ tsp
Black pepper powder
½ tsp
Salt
As needed
Oil
1 tbsp

Method
Cook the pasta according to the package instructions. Drain the water from the pasta and keep it aside. I have used penne pasta, you can choose any pasta of your choice.


Break open the eggs into a bowl. Add black pepper powder, salt to the eggs and beat well.


Heat oil in a pan, add finely chopped ginger, garlic and saute until raw smell vanishes.


Add the onions, salt and saute until they turn golden brown color.


Now add the capsicums/bell peppers and fry for 3 to 4 minutes on medium flame or until the vegetable turns soft.


Add dry red chilli flakes, mixed herbs, salt and mix thoroughly until well combined.


Add the egg mixture to the cooked vegetables and mix well. The eggs will get cooked and will combine well with the vegetables.


Now add the cooked pasta and toss it gently on low flame, until the vegetables and eggs are well mixed with the pasta.


Adjust the amount of salt, black pepper powder, red chilli flakes according to your taste.
Switch off the stove and transfer it to a serving bowl.


Finally sprinkle mixed herbs or oregano, drizzle few drops of olive oil and serve them hot with some sliced tomatoes or plum tomatoes.
