Noodles
are our kids favorite, but for the past one year I have stopped buying the
Maggi Noodles after having read that they are unhealthy and the masala has
preservatives in it. But my kids love noodles, so I buy the egg noodles or
plain noodles available in the market and make variations in it by adding
vegetables, eggs, chicken etc. So friends do try out this delectable Vegetable
and Egg Hakka noodles and have a great day.
Here’s
how to make Vegetable & Egg Hakka Noodles with step by step photos…
Ingredients
Chinese Noodles

1 packet

Onion
|
1 finely chopped
|
Green chillies
|
3 finely chopped
|
Ginger & garlic paste
|
1 tbsp
|
Carrots, beans, peas
|
1 ½ cups [finely chopped veggies]
|
Spring onion
|
2 finely chopped
|
Tomato ketchup
|
2 tbsp
|
Soya sauce
|
2 tsp
|
Chilli sauce
|
2 tsp
|
Vinegar
|
1 tsp
|
Black pepper powder
|
1 tsp [adjust according to taste]
|
Salt
|
As needed
|
Eggs
|
3
|
Oil
|
4 tbsp
|
Preparation
time: 10 minutes
Cooking
time: 20 -25 minutes

Method
Cook
the noodles according to the packet instructions. After the noodles are cooked,
drain the water and run some cold water through the noodles so that they don’t
get sticky.
Heat
oil in a kadai, add onions, green chillies and sauté until it turns
translucent. Add the ginger & garlic paste and sauté until raw smell
vanishes.
Now add
the finely chopped vegetables, salt and cook until almost cooked.
Add
tomato ketchup, soya sauce, chilli sauce, vinegar and stir really well.
Immediately
add the cooked noodles, ½ tsp of black pepper powder and stir until well
combined. Adjust the amount of salt at this point and switch off the stove.
In a
separate pan, heat about 1 tbsp of oil, break open 3 eggs, add about 1 tsp of
black pepper powder, salt and scramble the eggs to fine pieces.
Now add
the scrambled eggs to the cooked Vegetable Noodles and mix thoroughly.
Finally
add the finely chopped spring onions to the Egg Vegetable Noodles and mix well. Now delicious Vegetable and Egg Noodles is ready, serve it hot with tomato and chilli sauce.

Note:
I have
chopped the vegetables finely; you can cut them to thin slices and also add
more vegetables like capsicum, cabbage etc of your choice.
Be
careful when adding salt, because the sauce also will have salt in them.
Addition
of sauces is totally optional, you can skip them and still the noodles will
taste great.
If you
are vegetarian you can skip the eggs and skip the last step of mixing the eggs.
You can
also add cooked chicken cubes for additional taste.
