Vegetable Fried Rice Recipe/Fried Rice Recipe[Indo –Chinese Fried Rice]/Vegetable Fried Rice with step by step photos

Today, I am going to share with you all very popular Vegetable Fried Rice with not much of introduction. I was thinking that I had posted Fried rice earlier, but realized that I have not posted it after one of my reader requested for it. Try out this delectable Vegetable Fried Rice and post your suggestions.

Here’s how to make Vegetable Fried Rice with step by step photos…


Ingredients

Basmati rice/Long Grain Rice
2 cups
Carrots
2 finely chopped
Beans
12-14 finely chopped
Capsicums/Bell pepper
1 deseeded & finely chopped
Spring onions
2 or 3 stalks finely chopped
Green chillies
2 slit length wise
Garlic
4 cloves finely chopped
Ginger
1 tbsp minced or finely chopped
Soya sauce
1 tsp
Vinegar
2 tsp
Black pepper powder
1 tsp 
Oil
1 tbsp
Salt
As needed
Preparation time: 12-15 minutes 
Cooking time: 15-20 minutes

Method

Wash & soak the rice for 15-20 minutes. Boil enough water to cook the rice. When the water comes to rolling boil, add the washed and drained basmati rice, salt, 1 tsp of oil and let it cook.

Cook until the rice is just cooked, the rice should not be mushy. Meanwhile, wash the vegetables and chop them to fine pieces.


Drain the water completely, spread the rice on a plate and let it cool down completely. 


Heat oil in a kadai/pam, add chopped garlic, ginger, white part of spring onions and saute for about 30 seconds.


Add the green beans, carrots, little salt and cook vegetables by stirring often. It will take nearly 5-6 minutes. The vegetables should not turn mushy, it should be cooked through but still little crunchy.

Now add the finely chopped capsicums, green chillies and fry for another 3-4 minutes.


Now add the soya sauce and vinegar for the Chinese style. To make Indian Fried rice just add vinegar.

Add black pepper powder and stir well.


Now add cooked rice and mix thoroughly for a couple of minutes on high flame.


Add the finely chopped spring onions and mix really well and switch off the stove.


Delicious Vegetable Fried Rice is ready to be enjoyed. Sprinkle more spring onions and serve it hot with a dollop of tomato sauce/ketchup.


Suggestions:
  • Adjust the amount of black pepper powder according to your taste. 
  • If you are running out of vinegar and soya sauce, still no problem, you can skip them, the fried rice will still taste great.
  • You can make fried rice with left over white rice, make sure you just toss them well with vegetables.
