Raw Mango Rice /How to make Mango rice/Maangai Saadham

Yes friends, as I promised earlier here is another mango recipe in the mango recipe series. Now that we are getting bags and bags of mangoes from our back yard, we are distributing a lot of them to friends, relatives and neighbours. We plucked some raw tangy mangoes from the tree and made mango rice. This rice is one special kind of variety rice, as it is prepared in Seemandham/Vallikappu [Baby Shower] Ceremony in Tamil Nadu. Here’s how to make Raw Mango Rice with step by step photos…



Ingredients

Grated Raw Mango/Maangai
1 cup
Cooked Rice
2 cups
Ginger/Inji
2 inch piece finely chopped
Turmeric powder/Manjal thool
¼ tsp
Salt
As needed

For Tempering

Oil
2-3 tbsp
Mustard Seeds/Kadugu
¼ tsp
Cumin Seeds/Jeeragam
¼ tsp
Dry Red Chillies/Sigappu Milagai
2-3
Groundnuts/Peanuts/VaerKadalai
2 tbsp
Bengal Gram Dal/Kadalai Paruppu
2 tsp
Urad Dal/Ullutham Paruppu
1 tsp
Asafoetida/Perungaayam
One big pinch
Curry leaves
15-20
Preparation Time: 10-12 minutes           
Cooking Time: 10-15 minutes       
Serves: 4

Method

Wash and peel the mango. Grate it finely with vegetable grater.


Heat the oil in a kadai, splutter mustard seeds and cumin seeds. Now add Bengal gram dal, urad dal, dry red chillies, curry leaves and fry till golden brown.


Now add the chopped ginger, grated mango, turmeric powder, salt and fry well for about a minute.


Add the cooked rice and mix really well until well combined.


Yes, delicious, tangy and tasty Mango rice/Maangai Saadam is ready to be served. Serve it hot with Potato roast/Karunaikizhangu Fry/Chepankizhangu Fry and papad.
