Shahi Tukda/Shahi Tukra Recipe

Shahi Tukda/Tukra means royal dessert that can be made quickly and taste exotic. It one of the most sumptuous desserts made by frying the bread slices to golden brown colour and then soaking it in sugar syrup. The final touch of pouring the rabadi and garnishing with nuts & dried fruits makes it luscious , rich and royal. Enjoy this Shahi Tukra as dessert during this special month of Ramadan.

Here’s how to make Shahi Tukda with step by step photos…



Ingredients

Bread
6 slices
Milk
½ litre
Sugar
½ cup
Nuts [Almonds+Cashews +Pistas]
Each 5-6 chopped
Raisins
1 tsp
Corn Flour
1 tsp
Saffron
One pinch
Elachi/Cardamom Powder
¼ tsp
Preparation time: 15 minutes      
Cooking time: 35 minutes
Serves: 6

Method

Soak saffron in 2 tbsp of milk, mix the corn flour in 3 tbsp of milk and keep it aside.

Boil the milk and add the soaked saffron and the corn flour mixture. Now simmer the milk until it becomes thick but pouring consistency. This is called Rabadi. Add the chopped nuts, elachi powder and switch off the stove.


In a pan mix sugar with ¾ cup of water and simmer on low flame until you make thick sugar syrup. Keep it aside.


Cut the sides of the bread to remove the crust. Cut the bread into triangles.


Heat a pan and shallow fry it little oil or you can deep fry the bread till golden brown.


Soak the fried bread pieces in the sugar syrup for about a minute or until you cook the next batch of bread.

Arrange the soaked bread pieces in a plate. Pour the rabadi on top of all the bread pieces. 
The rabadi should be evenly covered on all bread slices.


Refrigerate for at least one hour. Delicious and tempting Shahi Tukda is ready to be enjoyed.  Sprinkle chopped almonds, pistas, raisins and serve it cold.
