Today I
am going to share and very healthy, protein packed side dish that can be
prepared for lunch for any rice varieties or for any kind of rotis. This is one
kind of side dish that can be made in less than 15 minutes and packed for

Ingredients
Soya Chunks

1 cup
|
Onion
|
1 large finely chopped
|
Ginger & Garlic
|
2 tsp finely chopped
|
Tomatoes
|
2 finely chopped
|
Green Chillies
|
1-2 slit lengthwise
|
Red Chilli Powder
|
¾ tsp
|
Coriander Powder
|
1 ½ tsp
|
Turmeric Powder
|
¼ tsp
|
Garam Masala Powder
|
¼ tsp
|
Salt
|
As needed
|
Coriander Leaves/Cilantro
|
2 tbsp finely chopped
|
To
Temper
Oil
|
2 tbsp
|
Mustard Seeds
|
½ tsp
|
Cumin Seeds/Jeeragam
|
½ tsp
|
Asafoetida/Perungayam
|
One big pinch
|
Curry leaves
|
10-12
|
Preparation
Time: 10 minutes
Cooking
Time: 15-20 minutes
Serves:
2-3
Method
In a
pan boil water. Once the water boils turn off the stove. Add the
soya chunks to it and keep it covered for 20 minutes.
After
20 minutes, drain the soya chunks in a colander and then wash it again in
normal water. Squeeze out the extra water from the chunks. Repeat
this process twice. Keep it aside.
Heat
oil in a kadai, splutter mustard seeds then add cumin seeds, asafoetida and fry
to 20 seconds.
Add onions,
ginger & garlic, green chilies, curry leaves and saute until onions turn
golden brown colour.
Now add
chopped tomatoes and fry well until it turns mushy.
Add red
chilli powder, coriander powder, turmeric powder, garam masala powder and mix
really well for about a minute.
Now add
the soy chunks/meal maker and mix really well.
Sprinkle
little water, cover and cook for about 3-5 minutes until soft and aromatic.
Finally
add chopped cilantro and mix really well.
Yes,
healthy and delicious Soy Chunks/Meal Maker Fry is ready to be enjoyed. Serve
it hot with any kind of roti, naan etc or as side dish for South Indian or
North Indian meals.
