Zucchini Bajji/Zucchini Fritters

Bajji is a very popular and an addictive deep fried evening snack. Bajji is made by coating different types of vegetables like onion, potato, plantain, eggplant etc in a special batter and deep fried in oil. For a change, I have made bajjis with zucchini and it taste totally awesome. Try out this wonderful snack and enjoy your day.

Here’s how to make zucchini bajji/fritter with step by step photos…


Ingredients

Zucchini
1
Besan Flour/Kadalai Maavu
1 cup
Rice Flour
¼ cup
Red Chilli Powder
½ tsp
Turmeric Powder
¼ tsp
Asafoetida/Perungayam
One big pinch
Salt
As needed
Baking Soda
One pinch [optional]
Oil
For Frying
Preparation Time: 5-7 minutes
Cooking Time: 15 minutes
Serves: 5-6

Method

Wash the zucchini thoroughly, make thin slices and keep it aside.


Add besan flour, rice flour, red chilli powder, turmeric powder, baking soda, salt, asafoetida and mix really well.


Add enough water to make a bajji batter. The batter should be thick enough to coat the zucchini pieces when dipped, but not too thick or too thin.


Heat oil for deep frying. Dip the zucchini pieces in the bajji batter, so that the batter coats well on both the sides. Carefully drop the slices into the oil.


Cook evenly on both sides till golden brown.


Delicious and yummy Zucchini bajji is ready to be enjoyed. Have a great evening with this exotic zucchini bajji/fritter.
