Here’s how to make Karpooravalli Bajji with step by step photos…

Ingredients

Karpooravalli Leaves
10 -15
Besan Flour/Kadalai Maavu
1 cup
Rice Flour
¼ cup
Red Chilli Powder
1 tsp
Cumin Powder
½ tsp
Garam Masala Powder
½ tsp
Asafoetida/Perungaayam
One big pinch
Cooking Soda [optional]
One pinch
Salt
As needed
Oil
For Frying
Preparation Time: 5-7 minutes
Cooking Time: 15-20 minutes

Method

Wash the karpooravalli leaves well, pat dry and keep it aside.

Add the besan flour, rice flour, red chilli powder, cumin powder, garam masala powder, asafoetida, cooking soda, salt and mix well.

Now add water little by little and mix to make a batter without any lumps. Make batter that is not too thick not too watery.

In a kadai heat oil, check if it is ready by dropping a drop of batter into it, if the batter floats to the top then the oil is ready.

Dip each karpooravalli leaf in the batter, make sure it is coated well on both side and slide it into hot oil.

Fry for 2-3 minutes on either side or until golden brown. Drain the bajjis and transfer it to a plate.

Yes, delicious, flavourful and aromatic karpooravalli bajji is ready to be enjoyed.  Serve it hot with any coconut chutney or even with just tomato ketchup.
