Pineapple Kesari /Pineapple Rava Kesari/Pineapple Sooji Halwa

Pineapple Kesari is very flavourful and tempting sweet dish which is very commonly served in all most all the marriges. Kesari is one of the easiest recipes of all the sweets and prepared in all most all the households in Tamil Nadu. I have already posted a plain Rava Kesari and Mango Kesari earlier. So, today I am sharing with you all very aromatic and delectable Pineapple Kesari. Do try it our friends and post your comments here.

Here’s how to make Pineaple Kesari with step by step photos…
Ingredients
Rava/Semolina Roasted
1 cup
Pineapple Cubes
1 ½ cup
Sugar
1 ¼ cup
Orange/Yellow Food Color
1 or 2 pinch
Ghee
3-4 tbsp
Cashew Nuts
10-12 nos
¼ tsp or 2-3 crushed
Pineapple Essesnce
1 – 2 drops optional
Water
2 cups
Method
Take about 1 cup of chopped pineapple and grind it in a mixer and keep it aside. Reserve the rest of the pineapple piece for later.


Heat about 2 tbsp of ghee in a pan and fry the cashew nuts till golden brown and transfer it to a plate.

In the same kadai, add 1 tbsp of ghee, rava and roast on low flame until it becomes golden brown colour. Transfer it to a plate.

Now add about 2 cups of water to the same kadai and let it come to boil.

When it starts to boil, keep the flame on low. Start adding the rava little by little stirring continuously. Make sure there are no lumps and do not stop stirring.


Once all the water has evaporated, add the ground pineapple paste to the rava and stir well.

Now add the sugar to the rava/semolina and keep stirring. Now it will turn watery again, do not panic, just keep stirring.

Cook the rava/semolina on medium or low flame.

Add the left over ghee and keep stirring. It will start to leave the sides of the kadai.  At this point add the cashew nuts, cardamom powder/Elachi Powder and mix really well.

Add the pineapple essence and rest of pineapple pieces to the kesari stir well and switch off the stove.

Yummy, delicious and flavorful Pineapple Kesari is ready to be enjoyed.

Suggestions:
I have not added food colour, if needed you can add yellow food color to the kesari.
Adding pineapple essence is just optional, if you don’t have it you can very well skip that portion.
I have not added raisins to the kesari, you roast about a tbsp of raisins and add it along with cashews.
