Vegetable Biryani Recipe– 2nd Method/South Indian Style Vegetable Birynai/KaaiKari Biryani

Here’s how to make Vegetable Biryani with step by step photos…
Ingredients
Basmati Rice
2 cups
Onion
2  big thinly sliced
Mixed Vegetables [Carrot, Beans, Potato]
2 cups chopped
Yogurt/Curd
1 ½ cup
Water
2 cups
Lemon juice
1 tsp
Cilantro/Coriander Leaves
2 tbsp
Salt
As needed

For Masala
Green Chillies
10
Garlic Cloves
8-10
Ginger
2 inch piece [about 2 pieces]
Cilantro
½ bunch
Mint
One handful

For Tempering
Oil + Ghee
3 tbsp
Cinnamon/Pattai
2 inch piece
Cloves/Kirambu
4
Cardamoms/Elachi
4
Bay Leaves
1 or 2
Fennel Seeds/Sombu
1 tsp
Star Anise
1
Cashew nuts
1 tbsp chopped
Preparation Time: 10-12 minutes           
Cooking Time: 20-25 minutes      
Serves: 4-5

Method
Wash and soak the basmati rice for about 25-30 minutes. Drain the water and keep it aside.

Grind the ingredients mentioned in the table above [green chillies, garlic, ginger, cilantro and mint] and keep it aside.


Wash and cut the required vegetables as shown. You can as many vegetables as you want.


Heat oil + ghee in a heavy bottomed vessel or pressure cooker. When the oil is hot add cinnamon, cloves, cardamom, bay leaves, fennel seeds, star anise and fry until nice aroma fills the room.

Now add the cashew nuts and fry until golden brown colour.


Add the slice onions and fry till translucent.


Add the ground masala and fry for about a minute.


Add all the freshly cut vegetables and mix really well. At this stage add the needed salt and mix thoroughly.



Mix the water and yogurt [ 1 ½ + 2] in a separate bowl really well.


Now add it to the vegetables, wait for one boil to come.


Then add the washed rice to it and give a gentle stir.


Cover and cook on medium flame for 10-12 minutes or for two whistles in pressure cooker.

Open the lid, and give a very gently stir or just fluff it up without breaking the rice.


Serve it hot with raita. Delicious and tempting Vegetable Biryani is ready to be enjoyed.


NOTE: Adjust the amount of green chillies according to your family needs.
