Gnocchi with Fresh Tomato Sauce/Gnocchi Recipe with step by step photos

Gnocchi’s are a sort for pasta for potato lovers. They are small Italian dumplings made from potatoes, flour[all purpose flour, buck wheat flour], egg and shaped into small ovals with ridged pattern on one side. Alternatively they can also be made from semolina flour[info source:BBC].  Gnocchi is eaten as an alternative to soup or salad. They are usually home-made in Italian households. But they are also available in packets in supermarkets. I have made store bought Potato Gnocchi and accompanied with fresh tomato sauce, but it can also accompanied with freshly prepared Pesto Sauce as well as various other sauces.

Here’s how to make Gnocchi & fresh tomato sauce with step by step photos…
Ingredients
Potato Gnocchi
2 cups
Olive/Sunflower oil
2 tbsp
Tomatoes
6 [big]
Onion
1 finely chopped
Garlic
4 cloves
Dry Red Chilli flakes
½ - ¾ tsp
Mixed Italian Herbs
1 tsp
Salt
As needed
Black Pepper Powder
As needed
Cilantro/Basil
2 tsp for garnishing
Grated Parmesan/Mozzrella Cheese
1 tbsp [optional]

Method

Blanching the Tomatoes
In a deep dish boil the water real good, at that time drop the tomatoes in the water and leave it for 2 minutes. Remove the tomatoes from the water and peel the skin. This is called as blanching.


After it cools, blend the peeled tomatoes in the blender to a fine paste and keep it aside.

I have made the tomato paste by blanching the tomatoes, if you do not have time you can blend the tomatoes without blanching also and make the sauce or you can just chop the tomatoes and make the sauce.

Preparing the Tomato Sauce

Heat about 2 tbsp of oil in a sauce pan. Add the finely chopped onions and cook on medium flame until it turns soft. Now add the finely chopped garlic and cook for another minute.



Add the tomato paste, dry red chilli flakes, mixed Italian herbs and salt ,allow it to boil and cook until it reaches to thick sauce consistency.



Now check for the spice and salt level and switch off the stove. Add a pinch of black pepper powder, basil/cilantro leaves and mix really well.


Store bought Gnocchi



Bring a pan of salted water to boil. Add the potato gnocchi and cook until it floats on the surface.


Filter all the water and keep the cooked gnocchi aside.


Now add the freshly prepared tomato sauce to the gnocchi. Add one big pinch of mixed Italian herbs and gently mix everything together.


Yes, delicious and filling Potato Gnocchi with Fresh Tomato Sauce is ready to be enjoyed. Garnish with basil, cheese and serve it hot either for dinner or mid evening snack.
