Preparation Time: 10 minutes
Cooking Time: 20-25 min

Method
Wash the basmati rice atleast 2-3 times and
drain the water. Add fresh water and soak it for about 20 -25 minutes and then
drain the water.
Heat ghee in a heavy bottomed vessel or pressure
cooker, add cinnamon sticks, cloves, elachi, bay leaf, black pepper corns and
fry for 30-40 seconds.
Add the onions, green chillies and sauté until
translucent.
Now add cashew nuts and fry for about a minute.
Add ginger & garlic paste to the onions and
fry until the raw smell vanishes.
Add the washed and drained basmati rice and
gently fry it in oil for about a minute.
Add 2 cups of water and salt to the rice, cover
and cook for 15-20 minutes. Give a stir in between to avoid any burning, once
the rice is cooked switch off the stove.
Open the lid and fluff the rice with a ladle.
If you are using a pressure cooker then cook for
2 whistles and wait for the steam to release completely.

rice is ready to be enjoyed. Serve it hot with dal/paruppu thakkali, peas masala, kurma , chicken curry/non veg gravies, egg masala or any other spicy gravy of your choice.
