Method

In a wide bowl add 1 cup wheat flour, ¼ cup rice flour, ¼ tsp cardamom powder, ¼ tsp ginger powder, one small pinch baking soda, one small pinch salt and mix everything really well.

Chop the bananas, add it to the blender and grind to fine paste. Keep it aside.

Heat grated jaggery and ¼ cup water to a sauce pan. Let the jaggery melt completely, keep stirring continuously. Once the jaggery is melted completely, switch off the stove. Let it jaggery water cool completely; filter it with a strainer to get rid of any impurities.

Now add banana puree and jaggery water to the wheat flour mixture.

Mix everything really well to form a lump free batter with required water. The consistency of the batter should be like idli batter.

Heat a paniyaram pan, add ½ tsp of ghee or oil in all the holes.

Then fill the holes with the prepared batter. Reduce the heat and cook the appam.

When the corners start to cook and loosen, flip it over to the other side using a spoon or wooden stick.

Cook the other side until it turns to golden brown color.

Repeat this for rest of the batter.

This batter yields about 28 to 30 appams.
