Method

Chop onions, green chillies, cilantro/coriander leaves deseed the red chillies  and keep it aside.

Clean and wash the chicken thoroughly. Cut them to cubes and keep it ready.

Heat 3 tbsp oil in aheavy bottomed kadai.  Add  dry red chillies, curry leaves and fry for about a minute.

Now add chopped onions, green chillies and fry really well until they turn to golden brown color.

Add 2 tbsp of ginger and garlic paste and sauté well until all the raw smell has vanished.

Add coriander powder, turmeric powder, salt and sauté really well.

Now add cleaned and cut chicken to the kadai and mix everything well. Saute the chicken well for another 2-3 minutes or until the chicken has changed color.

Now add about 1 cup of water, cover and cook for about 20 minutes. Stir in between to avoid it from burning.

When the water is completely evaporated and chicken completely cooked, roast the chicken well. If needed add little oil when frying the chicken.

Finally add chopped cilantro, give a good stir and switch off the stove.

Yummy, delicious, spicy and tempting Pallipalayam Chicken Fry is ready to be enjoyed.

Suggestions:
I have used ginger and garlic paste, instead you can use 2 inches of ginger finely chopped and 10-12 garlic cloves finely chopped.

You can also add 2 tbsp of finely chopped coconut before adding the chicken.
