arisi urundai is usually made on fasting days especially in the month of
Puratasi and offered as neivedhyam for Lord Balaji. This pori arisi urundai is

Here’s how to make Pori Arisi Urundai with step

Ingredients
Idli
Rice/Puzhungal Arisi/Boiled Rice

½ cup

Jaggery/Vellam
|
¼ cup
|
Water
|

cups

Cardamom/Elachi
Powder
|
½ tsp

Dry
Ginger Powder/Sukku Powder
|
¼ tsp
|
Cashew
nuts
|
8-10
chopped

Ghee
|
2 tsp
|
Salt
|
One small
pinch

Method
Dry roast the Idli Rice/Puzhungal Arisi in a
heavy bottomed kadai.
The rice will turn to beautiful golden brown
color. At that time switch off the stove and transfer it to a plate. Keep
stirring the rice when roasting to avoid it from burning.
Cool the roasted rice and then add it to the
blender. Grind the rice to powder; it should not be very coarse or very fine.
Keep the ground rice powder aside.
Heat 1 cup of water and jaggery in a sauce pan.
Keep stirring and wait until the jaggery completely dissolves. Now switch off
the stove and strain it through a steel strainer to get rid of impurities. Keep
the jaggery water aside.
In the same kadai, add 2 tsp of ghee and fry the
chopped cashew nuts to golden brown color.
Now add the filtered jaggery water + 1 cup of
water to the kadai.
Add dry ginger powder, cardamom powder, one
small pinch of salt to the kadai and let it come to one boil.
At this stage, add the ground rice powder and
keep stirring continuously on low flame. Keep stirring to avoid forming any
lumps.
Let the rice powder cook in the jaggery water
and when done and all the water absorbed switch off the stove.
Let the mixture cool down a little. Grease hand with little oil and make
small balls.
Similarly make balls with rest of all the
mixture.

Urundai is ready to be enjoyed. You can serve this healthy urundai as evening
snacks for kids.
