Method
Add the cooked rice/left over cooked rice in a
wide bowl and mash it really well with your hands.
Add finely chopped onions, green chillies, curry
leaves, red chilli powder, turmeric powder, garam masala powder, black pepper
powder, cumin seeds, besan flour/kadalai maavu, lemon juice and salt to the
mashed rice.
Mix everything really well with your hands. It
will be a little sticky, but it is totally fine.
Make small lemon size balls with your hands and
keep it aside.
Heat oil in a kadai for frying the bondas. When the oil is hot enough, add the rolled balls
about 5-6 balls depending on the size of the kadai.
Cook the bondas to golden brown color evenly on
all the sides on medium flame. When the bubbles in the oil subside and the color
of the bondas change to beautiful golden brown color, drain from oil to a plate
using a slotted spoon.
