Method
Boil 2 cups of water in a sauce pan and
remove it from stove.
Add the soya chunks/meal maker, little salt
to it and let it rest for 20 -30 minutes. Keep it covered.
Once the soya chunks doubles in size,
filter and remove the soya chunks separately. Wash and rinse with water 2-3 times and drain the water completely.
After it cools, squeeze the soya chunks
well in between your palms so that there is no water and completely dry.
Grind the roasted gram/fried
gram/pottukadalai to fine powder and keep it aside.
Add the ingredients mentioned under “to
grind” – fennel seeds, poppy seeds, grated coconut, cinnamon, cloves, cardamom,
green chillies, ginger & garlic paste and grind it really well.
Now add the cooked soya chunks to the
ground masala and grind everything together to a paste [Do not add any water].
Transfer the ground paste to a bowl; add
the finely chopped onions, cilantro/coriander leaves, turmeric powder, little
salt and mix well.
Add roasted gram powder/Pottu kadalai
powder to the soya chunks mixture.
Add 2 tbsp of rice flour to the mixture and
mix everything really well.
Take small portions and roll it to a ball
and keep it aside.
Meanwhile heat oil in a kadai, add the
kolas and cook in medium flame until it turns to golden brown on all sides.
[Cook only on medium flame, if cooked in higher flame it would get browned on
the outside and the inside will not be cooked]
Once done, remove from oil and drain it on
paper tissue.

Chunks Kola Urundai is ready to be enjoyed. Serve it along with tomato ketchup
as evening snacks or as side dish for lunch.
Suggestions:
Make sure you squeeze out the water from
soya chunks, or else when you grind soya chunks it will become watery and you
will not be able to make balls.
You should be able to make balls easily, if
it breaks then add little pottukadalai powder and little rice flour to fix the
dough.
Cook only on medium flame, to avoid the
balls from burning.
