Method
The
very first step is to toast the bread, you can either toast the bread in tawa
or bread toaster. Since I was making one full loaf of bread pack, I cut them
into pieces, added about 3 tsp of oil in kadai and toasted them as shown in the
photo. After the bread turns crispy, switch off the stove and transfer it to a
plate.
Heat
about 1 tbsp of oil in a kadai, splutter mustard seeds, then add cumin seeds,
urad dal, chana dal and fry until the dal changes color.
Now add
curry leaves/karivepillai and fry until they turn crispy.
Add the
finely chopped onions and green chillies to the kadai. Fry them well until they
to light golden color.
Add the
ginger & garlic paste and sauté well until the raw smell vanishes.
Next
add finely chopped tomatoes and sauté well until it turns mushy.
Add red
chilli powder, coriander powder, turmeric powder, salt and sauté well for about
a minute until the raw smell vanishes.
Cook
the masala until the oil separates. Add
about 2 tbsp of water to the masala and mix really well. Now add
bread pieces, mix really well until each piece is coated with the masala.
Finally
add finely chopped cilantro/coriander leaves and give a good stir.
Yes,
delicious and super tempting Bread Upma is ready to be enjoyed. Serve it
garnished with chopped cilantro and lemon wedges.
Suggestions
You can
replace oil with butter or ghee for rich flavour.
Instead
of red chilli powder and coriander powder replace it with sambar powder.
Toasting
of bread is key to make crispy bread upma, if you are pressed on time, you can
very well skip this step. But I suggest you to toast the bread before making
the upma.
