Dal Tadka/Dal Tadka Recipe/How to make Dal Tadka/Punjabi Dal Tadka Recipe

Dal Tadka is a very famous and traditional recipe of North India. Dal Tadka is a very common item seen in all the Indian restaurant menus and in Dhabas.  Dal Tadka is usually made with Thurdal/Thoor Dal but can also be made with combination of Dals. It is a very flavourful dal cooked in onion, tomato and masala mixture and gets an extraordinary taste from the final tempering or the Tadka. Here’s how to make Dal Tadka with step by step photos…
Ingredients
Ghee/Oil
1 ½ tbsp.
Bay Leaf/Birinji Leaf
1
Onion/Vengayam
1 big finely chopped
Tomato/Thakkali
2
Green Chillies/Pachhai Milagai
2  finely chopped
Ginger/Inji
1 “ piece finely chopped
Red Chilli Powder/Milagi Thool
½ tsp
Turmeric Powder/Manjal Thool
½ tsp
½ tsp
Cilantro/Coriander Leaves
2-3 tbsp
Salt
As needed

For Cooking Dal/Thur Dal
Thur Dal/Thuvaram Paruppu
1 cup
Turmeric Powder
½ tsp
Oil
½ tsp
Asafoetida/Perungayama/Hing
¼ tsp
  
For Tempering
Ghee/Oil
2 tsp
Cumin Seeds/Jeeragam
5-6 finely chopped
Dry Red Chillies/Kaaindha Milagai
2
Red Chilli Powder/Milagi Thool
½ tsp
Asafoetida/Perungayam/Hing
One big pinch

Method
Wash the dal thoroughly with water at least 2-3 times and drain the water.

Add washed thurdal/thuvaram paruppu, 3 cups of fresh water, turmeric powder, asafoetida, oil to the pressure cooker.

Pressure cook for 3-4 whisltes and switch off the stove. Wait for the steam to release all by itself.

Open the lid and mash the dal well with masher/mathu and keep the dal ready.

Chop the tomatoes, add it the mixer and grind it fine puree and keep it aside.

Heat 1 ½ tbsp. of gheein a kadai/pan, add bay leaf /birinji leaf and fry for 15-20 seconds.

Add finely chopped onion, green chillies, ginger and fry well until it turns to light golden color.

At this stage add the tomato puree and mix well, let it boil well for about 3-4 minutes.

Now add red chilli powder, garam masala powder, little salt, turmeric powder and mix really well.

Let the masala cook for about a minute and you will see the oil /ghee separates out. At this stage add the cooked and mashed Thurvar Dal/Thur Dal and required salt.

Mix everything really well, add required salt, 1 cup of water, adjust the consistency and let it boil really well for about 5-6 minutes or until well combined.

Finally add chopped coriander leaves, mix well and switch off the stove.

Meanwhile heat 2 tsp of ghee in a kadai for tempering and splutter cumin seeds.

Now add dry red chillies and fry for 20 seconds.

Add the finely chopped garlic and fry well until it changes light golden color.

At this stage add the red chilli powder, mix really well and switch off the stove.

Now add the tempering to cooked Dal.

Simply, delicious, aromatic and healthy bowl of Dal Tadka is ready to be enjoyed. Serve it hot with steam cooked white rice and Baby Potato Fry.
