Egg Salna/Egg Salna Recipe/Muttai Salna/How to make Egg Salna with step by step photos/Salna for Parottas,Dosas etc

Egg Salna is a very popular and common side dish served along with parottas, chapathis, rotis, idiyappam etc in all most all the road side shops[kai yendhi bhavans] and Parotta stalls in South India. Egg Salna can be made two ways, either the eggs can be broken directly to the gravy or by adding the hard boiled eggs. Here I am sharing the one I made with hard boiled eggs. Here’s how to make Egg Salna with step by step photos…
Ingredients
8
Onion/Vengayam
1 big sliced
Green Chillies/Pacchai Milagi
2 slit and cut
Oil
1 tbsp
Fennel Seeds/Sombu
1 tsp
Curry Leaves/Karuvepillai
10-12
Cilantro/Coriander Leaves
1-2 tbsp finely chopped
Salt
As needed

For Sautéing and Grinding
Oil
2 tbsp
Cumin Seeds/Jeeragam
1 tsp
Fennel Seeds/Sombu
½ tsp
Black Pepper/Milagu
1 tsp
Onion/Vengayam
1 big chopped
Green Chillies/Pacchai Milagai
2 slit and cut
Tomato/Thakkali
3 finely chopped
Garlic cloves
5-6 crushed
Ginger/Inji
2” piece chopped
Red Chilli Powder
1 ½ tsp
Coriander Powder
3 tsp
½ tsp
Turmeric Powder
½ tsp
Coconut
¼ cup
Gasa Gasa/Poppy Seeds [optional]
1 tsp
Mint/Pudhina
About 20-25 leaves
Salt
As needed

Method
Boil the Eggs
Boil the eggs with enough water along with salt. When it is done, peel the shell and keep the eggs ready. For detailed post on how to boil the eggs do check out thelink.

For Sauteing and Grinding
Heat 2 tbsp of oil in a pan, splutter cumin seeds, fennel seeds and black pepper.

Add onions, green chillies, one big pinch of salt and saute well until the onions turn translucent.

Add crushed garlic and chopped giner and saute well until the raw smell vanishes.

At this stage add the chopped tomatoes and saute well until they turn mushy.

Now add red chilli powder, coriander powder, garam masala, turmeric powder, salt and mix thoroughly.

Let it cook for a minute until the oil starts to separate out.

Then add the coconut, gasa gasa/poppy seeds and saute for about 20-30 seconds. 

Finally add the mint leaves mix really well and switch off the stove.

Let the whole mixture cool down. Add everything to a mixer/blender and grind to fine paste with required water and keep it aside.

To Make Salna
Heat about 1 tbs p of oil in a saucepan, splutter fennel seeds. Wait until nice aroma arises.

Add chopped onions, green chillies and fry well until they turn translucent.

Add curry leaves and fry well until they turn crispy.

Now add the ground masala paste along with 2-2 ½ cups of water, little salt and let it boil for 6-8 minutes.

Add chopped cilantro and let it boil for another minute.

Meanwhile make small slits in the eggs.

Now slowly add the boiled eggs to the salna and let it boil for another 2-3 minutes. Now switch off the stove.

Yes, delicious and super tempting Egg Salna is ready to be enjoyed. Serve it hot with rotis/chapathis/naans/idiyappam/Parotta  or just with steam cooked white rice or Biryanis etc.
