Carrot
Soup, the name says it all, a very healthy and tempting soup to keep everyone
and fit and healthy. In addition to regular carrot soup, I have added ginger,
turmeric powder, cumin powder and black pepper powder for added taste. Do try

Here's short video on how to make Carrot Soup...
Method
Wash
all the vegetables thoroughly and chop them to fine pieces and keep it ready.
Heat 2
tsp of oil in a pressure cooker, add garlic cloves and fry to light golden
color.
Add the
chopped onions, green chillies , pinch of salt and saute until they turn soft.
Add the
chopped ginger and fry for few seconds.
Now add
the chopped tomatoes and fry until they turn soft.
Add
chopped carrots, salt and saute well for about a minute.
Add 2.5
cups of water or until the vegetables are completely submerged in it.
Add ¼ tsp
of turmeric powder, mix well and when it comes to rolling boil, pressure cook
for 2 whistles and switch off the stove.
Wait
for the steam to release all by itself, let it cool down, strain the vegetables
and add it to the mixer.
Grind
the vegetables to fine paste.
Now add
the ground paste and the water inw which the vegetables were cooked to the
pressure cooker. Add ¼ tsp
of turmeric powder, ½ tsp of black pepper powder and mix well.
Simmer
for a minute or two and switch off the stove. Garnish with cilantro or mint
leaves and serve it hot.
