Saamai/Little
Millet Kanji is a
very healthy and filling breakfast which keeps our day going. The seeds of
Saamai are smaller than those of other common millet varieties. Saamai is rich
in fibre, it helps in reducing fat and is good for bones and muscles. It is
loaded with iron and protein. Little millet helps in controlling blood sugar
level and is a rich anti-oxidant. Do try out this healthy and filling Saamai

2 slit and cut

Garlic Cloves/Poondu Pal

Carrot

¼ cup finely chopped

Milk/Coconut Milk
|
¾ cup

Grated Coconut [optional]

Method
Wash it
thoroughly with water 2-3 times and drain the water.
Heat 2
tsp of oil in a pressure cooker, splutter 1 tsp of cumin seeds/jeeragam, then add
½ tsp of black pepper.
Add 2-3
slit green chillies, 4-5 garlic cloves and saute well for few seconds.
Add ½ tsp
of fenugreek seeds and give a good stir for few seconds.
At this
stage add the washed saamai/little millet, dal and required salt to the
pressure cooker. Also add in curry leaves and mix everything really well.
Now add
4 cups of water to the pressure cooker.
Let it
come to rolling boil, close the lid and pressure cook for 3 whistles.
After
the steam releases completely, open the lid. Add 1 to 1 ½ cups of water and mix
well.
Now add
¾ cup of boiled milk/coconut milk to the kanji and mix well. Adjust then consistency
of the kanji as required.
Healthy
Saamai Kanji is ready to be enjoyed. Sprinkle grated coconut on top of kanji
and enjoy.
