Onions/Vengayam

2 finely chopped

Ginger & Garlic Paste
|
2 tsp

Tomatoes/Thakkali

3 finely chopped

Carrot
|
1 small cup [finely chopped]
|
Beans
|
1 small cup [finely chopped]
|
Capsicum/Bell Pepper
|
1 small cup [finely chopped]
|
Red Chilli Powder
|
1 tsp
|
Coriander Powder
|
1.5 tsp
|
Turmeric Powder
|
¼ tsp
|
½ tsp
|
|
Tomato Sauce
|
2-3 tsp
|
Salt
|
As needed
|
Coriander Leaves/Cilantro
|
2-3 tbsp

Oil
|
2 tbsp +2-3 tsp

Method
To
Cook Macaroni
Boil
about 5 cups of water in a sauce pan/vessel, Add salt and 2 tsp of oil to the
water.
Let the
water come to rolling boil, at this stage add the macaroni and stir well.
Let the
macaroni cook for about 10-12 minutes. Check
if the pasta is cooked by cutting only one pasta with a spoon. If you can cut
it easily then the macaroni is cooked.
Switch
off the stove, drain the water. Run it under cold water to avoid overcooking
and to remove excess starch. Now the pasta is ready, keep it aside.
To
Cook Vegetables
Heat
about 2 tbsp of oil in a kadai, add finely chopped onions, green chillies,
little salt and mix well. Saute the
onions well until they turn to light golden brown color.
Now add
the ginger & garlic paste and saute well until the raw smell vanishes.
Add the
finely chopped tomatoes and saute well until they turn mushy.
Add
chopped carrots, beans and little salt to the kadai. Fry the vegetables really
well for about 3 minutes.
Add ¼ cup
of water and mix well. Cover and cook the vegetables for about 4-5 minutes.
Stir in between to avoid burning of vegetables.
Then
add chopped capsicum mix well and cook for about a minute or two.
Add red
chilli powder, coriander powder, turmeric powder, cumin powder, very little
salt and mix well for about a minute. Add ¼ cup of water, cover and cook for about 2-3 minutes. This ensures the masala is well combined with the vegetables.
Add
chopped coriander leaves, tomato sauce and mix well. Switch off the stove.
To
make Vegetable Macaroni Pasta
Add the
cooked pasta to the cooked vegetables and mix everything really well until all
the masala is evenly spread in the pasta.
Finally
garnish with chopped cilantro/coriander leaves.
Yummy,
healthy, super delectable and colourful bowl of Vegetable Macaroni Pasta is
ready to be enjoyed.
Suggestions:
You can any number of vegetables of your choice.
Adjust the spice and salt level according to your family needs.
If you like the flavour of garma masala powder then you can add 1/4 tsp when making the masala.
If you prefer to serve it with cheese, just serve the macaroni hot with some grated cheese.
