Today, I am going
to share a very healthy and delicious Mixed Vegetable Soup that can be made in
a jiffy. I have added carrots, beans, cabbage and corn, you can add more
vegetables of your choice. For spice, I have used black pepper powder, but you
can add red chilli flakes as well. Do try out this delicious, healthy and
tempting soup that will help you stay healthy and build your immunity.

Ingredients
Onion/Vengayam

1 small finely chopped
|
Garlic Cloves/Poondu
|
5-6 finely chopped
|
Carrot [1 ]
|
1 cup [finely chopped]
|
Beans [12-14]
|
1 cup [finely chopped]
|
Cabbage
|
1 big cup [finely chopped]
|
Corn
|
1 small cup
|
Corn flour
|
2 tbsp
|
Black Pepper Powder/Milagu Thool
|
½ tsp or as needed
|
Salt
|
As needed
|
Coriander Leaves/Cilantro
|
1 tbsp finely chopped
|
Oil
|
2 tsp
|

Here’s

Method
Wash
and cut the vegetables and keep everything ready.
Add
chopped carrots, beans, cabbage and corn to the pressure cooker.
Add
required salt to the pressure cooker.
Now add
water about 3 cups or until the vegetables are completely submerged in it.
Close
the lid and pressure cook for 2 whistles.
Wait
for the steam to release all by itself, open the lid and keep it aside.
Heat 2
tsp of oil in a sauce pan, add finely chopped garlic and fry until nice aroma
arises.
Add the
finely chopped onions, little salt and saute until they turn translucent.]
Now add
the cooked vegetables along with the water, add 2 more cups of water and let it
boil for about 2-3 minutes.
Meanwhile
add 2 tbsp of corn flour to a bowl, add ¼ cup of water and mix really well
without any lumps.
At this
stage add the cornflour mixture and stir really well. Let it boil for 2-3
minutes. The soup will become thick.
Add ½ tsp
of black pepper powder, mix well and switch off the stove.
Finally
add the chopped coriander leaves and mix really well.
Yummy,
delicious and super healthy Vegetable Soup is ready to be enjoyed.
Suggestions:
You can
add any number of vegetables of your choice.
I have
added just black pepper powder, you can very well ad red chilli flakes as well.
