Mango Halwa/Maampazham Halwa with Jaggery [Video Recipe]
Method
Wash
and cut the mangoes, scoop out the pulp out the mangoes and keep it in a bowl.
Heat 2
tsp of ghee in a heavy bottomed kadai. Add the chopped cashew nuts and fry them until they to golden color.
Transfer
the fried cashews to a plate.
Now add
the mango pulp to the kadai and mash really well. I have used the pulp as such,
you can very well blend it and use it.
It will
start turning into a puree, then let it cook for 3-4 minutes.
Now add
1 cup of jaggery and start stirring it, it will start to turn watery, but do
not worry. Keep mixing until the jaggery is well combined and cook for another
2-3 minutes.
Just
keep stirring, slowly it will change to golden color.
Now add
1 tsp of ghee and keep mixing for another 2-3 minutes.
Add ¼ tsp
of cardamom/elachi powder and the fried cashews nuts and mix well. Slowly it
will reach halwa consistency.
Finally
add 1 tsp of ghee and mix well. The ghee will start to ooze out, at this stage
switch off the stove.
Healthy
and delicious Halwa is ready to be enjoyed.
