Method
Keep all the ingredients ready.

Boil the eggs and peel the shell. Cut the eggs into wedges and keep it ready. Check out how to make Perfect Boiled Eggs Here

To Make Batter
Take a wide bowl, add maida, corn flour, ginger & garlic paste, red chilli powder, black pepper powder, salt and mix well.

Add water slowly and mix thoroughly to make a batter. The batter should not be too thick or too thin.

Heat oil in a kadai to fry the eggs. Drop one drop of batter in the oils, if it floats up fast then the oil is ready.

Dip the egg wedges in the batter and drop it in the oil as shown.

Fry the eggs evenly on all sides by flipping it to golden color and transfer it to a plate.

Similarly fry all the eggs slices in batches and keep it ready.

Preparing Sauce
Heat 3 tsp of oil in a pan, add 1 tsp ginger, 1 tsp garlic and saute for 20-30 seconds.

Add 1 cup of chopped onions, little salt and saute until the onion turns to light golden color.

Add finely chopped capsicum and saute for about a minute.

Now add soya sauce 2 tbsp, Red chilli sauce 3 tbsp, Tomato sauce 3 tbsp, Vinegar 2 tsp and mix everything well on low flame.

Add ½ cup of water, finely chopped spring onions, red chilli flakes and boil for about 25 -30 seconds.

At this stage add the fried eggs to the prepared sauce.

Slowly flip the egg pieces slowly so that it is covered with sauce all over evenly.

Finally garnish with cilantro or spring onions and serve it hot with Fried Rice or Ghee Rice and enjoy.
