Today, I am going to
share a very basic, simply, easy and delicious Kaara Chutney which is usually
served with Idlis, Dosas, Uthappam, Kuzhi Paniyaram etc. Kaara chutney can be
made in different ways, here I have made by sautéing the shallots and rest of

Method
Heat 1 tbsp of oil in a kadai/pan, add shallots/sambar
vengayam and little salt to it.
Sauté the onions well, until it turns to golden brown
color.
Add garlic cloves and sauté well until the color
changes.
Now add the dry red chillies and sauté well for about
30-40 seconds.
Add the tamarind and sauté for another 30-40 seconds
and switch off the stove.
Let the mixture cool down completely. Add it to mixer along with salt and grind it to fine paste with little water. Transfer the ground chutney to a bowl.
Heat 3 tbsp of oil in a pan/kadai, splutter mustard
seeds and urad dal. Add curry leaves and fry until it turns crispy and switch off
the stove.
Add the tempering to the chutney.
Delicious, tempting and lip-smacking Kaara Chutney is
ready to be enjoyed.
