Paal Payasam/Milk Payasam is a traditional and authentic payasam made in South India on Festival days as offerings to gods or on special occasions and celebrations. Paal Payasam is a rich rice pudding made by simmering rice in milk and sugar slowly until it reaches thick and creamy consistency. Here’s how to make Paal Payasam with step by step photos and Video…

Ingredients
Raw Rice/Pachha Arisi
¼ cup
Milk/Paal
1 litre
Sugar
¼ cup + 2 tbsp
¼ tsp or 3 crushed
Salt
One pinch
Ghee
2 tsp
Cashew nuts/Mundhiri
6-8 chopped
Raisins/Dhiratchai
10-12
Saffron[optional]
Few strands for garnishing

Here’s a short video on how to make Paal Payasam

Method
Wash and soak ¼ cup of raw rice for about 20-30 minutes.

Add 1 litre of milk to a heavy bottomed sauce pan and let it come to rolling boil. Immediately reduce the flame and stir really well and let it boil for about a minute.

Now add the washed and soaked rice to the milk and mix really well.

Let the rice cook on low flame for about 12-15 minutes. Make sure you keep stirring now and then.

By now the rice would have cooked and the milk also would have reduced.

Now mash the rice a little  with the masher, this will make the payasam more thick and creamy.

Let it boil for another minute or two. Add ¼ cup + 2tbsp of sugar and mix really well until the sugar dissolves.

Add one pinch of salt and mix well. Let it boil really well on low flame for another 3-4 minutes.

Now add ¼ tsp of cardamom Powder or 3 Elachis crushed and mix really well and let it boil on low flame.

Meanwhile heat 2 tsp of ghee in a pan. Add chopped cashew nuts and roast until it turns to light golden color.

Then add the raisins and wait it puffs up, then switch off the stove.

Now add the roasted cashew nuts & rasins along with ghee to the Paal Payasam and switch off the stove.

Rich and creamy Paal Payasam is ready for Neivedhyam or to be enjoyed.
