Here’s a short video on how to make Egg Drop Curry…

Preparation

Chop onions, keep rest of the ingredients ready. Chop the tomatoes, add it to the mixer and grind it to fine paste with little water and keep it ready.

Add the coconut pieces or about ½ cup of grated coconut to the mixer and grind it to fine paste.

Method

Heat 1 tbsp of oil in a pan/kadai, splutter mustard seeds and cumin seeds.

Add the finely chopped onions, green chillies, little salt and mix really well.

Add the curry leaves, mix well and saute until the onion changes to golden color.

Add 1 tsp of ginger & garlic paste and saute well until the raw smell vanishes.

Now add the tomato puree and mix well. Let it boil for about a minute.

At this stage add red chilli powder, coriander powder, turmeric powder, garam masalapowder, cumin powder, fennel powder and needed salt.

Mix everything really well and let it boil well for about a minute.

Add about 2 cups of water, mix really well and let it boil well until all the raw smell of the masala vanishes.

Add the ground coconut paste [about ¼ cup] to the gravy and give a good stir.

Let it cook for about 2-3 minutes. By this time the gravy is cooked and is at the right consistency.

Now reduce the flame and it’s time to break open the eggs.

You can break open the eggs directly to the gravy, but I break it to a bowl and then add it to prevent adding of any spoilt eggs to the gravy.

Add the eggs one by one as shown. Space out the eggs in the gravy,so that they can cook properly. Cook the eggs only on low flame. Cover and cook the eggs for about a minute or two.

Open the lid and check if the eggs are cooked, if not close the lid and cook for some more time.

Finally add the chopped cilantro and switch off the stove.

Delicious, tasty and tempting Egg Drop Curry/உடைத்து ஊற்றிய முட்டை குழம்பு is ready to be enjoyed. Serve it hot with chapatis, rotis, ghee rice or with pulav etc.
