Method
Cooking the Vegetables
Heat 2 tbsp of oil in a pan, add finely
chopped garlic and give a good stir.
Add finely chopped onion and stir really well until they turn translucent.
At this stage add finely chopped carrots and mix really well.
Now add 3 tbsp of sweet corn and mix
really well.
Then add the finely chopped capsicum, required salt and mix everything really well.
Sprinkle very little water and cook for about a minute. The vegetables should be cooked yet they should be crunchy.
At this stage add the ½ tsp of black pepper powder and mix really well until combined.
Now switch off the stove and keep the vegetables aside.
To Cook the Pasta
Boil about 6-7 cups of water in a sauce
pan. Add required salt and about 2 tsp of oil to it.
Let it come rolling boil; at this stage
add the Penne Pasta or any pasta variety of your choice.
I have used whole wheat pasta which took about 15 minutes to cook; you can check the package directions and cook the pasta accordingly.
Drain the water completely and keep it
ready.
To Make White Sauce
Heat a pan and add about 2 tbsp of
unsalted butter.
Add 3 tbsp of maida/all-purpose flour and mix really well on low flame. Saute until the maida turns aromatic but does not change color.
Now add 1 cup of milk and mix really well. Make sure no lumps are formed. You can use a whisk to mix which is easier.
Add another cup of milk and stir
continuously until it thickens without any lumps. It will turn into a silky and
creamy sauce.
Mix everything really well until well combined. The creamy white sauce is ready.
Add the boiled pasta and cooked
vegetables to the prepared white sauce.
Mix everything really well until evenly
mixed and combined.
I have added about 2-3 tbsp of boiled pasta water to thin down the sauce.
Finally sprinkle red chilli flakes,
mixed herbs, grated cheese and serve it hot.
Delicious and Exotic White Sauce Pasta
is ready to be enjoyed. Serve it hot with grated cheese.
