Today, I am going to share a very simple, tasty and delectable Egg Masala Recipe. This Egg Masala can be made in a jiffy without any grinding and can be served with simple Pulav varieties or with Milagai Killipotta Sambar or even with rotis/chapatis. Here’s how to make Egg Masala Recipe with step by step photos…
Ingredients
Eggs [Boiled] |

1 big finely chopped |
Green Chillies |
3 finely chopped |
Tomatoes |
3 finely chopped |
Ginger |
1 inch finely chopped |
Garlic Cloves |
6-8 finely chopped |
Red Chilli Powder |
1.5 tsp |
Coriander Powder |
1 tsp |
Turmeric Powder |
¼ tsp |
Salt |
As needed |
Curry Leaves/Karuvepilai |
10-12 |
Coriander Leaves/Kothamalli |
2 tbsp finely chopped |
Oil |
2 tbsp |
Cinnamon Sticks |
2 sticks |
Cloves |

Boil the eggs, peel the shell and keep it aside. Check the link to see how to make boiled eggs.
Cut the boiled eggs into halves and keep it aside.
Heat 2
tbsp of oil in a kadai/pan, add cinnamon sticks, cloves, caradamom/elachi,
fennel seeds, bay leaves and wait until nice aroma fills the room.
Add
finely chopped onions, green chillies, little salt and saute really well.
Add chopped curry leaves and mix well. Saute everything really well until the onions turn to golden brown color.
Now add the chopped ginger and garlic to the onions and saute for about 30-40 seconds.
Add the
chopped tomatoes and saute really well until they turn mushy for about 3-4
minutes.
At this
stage add red chilli powder, coriander powder, turmeric powder and salt.
Now add about ½ cup of water and mix everything really.
Let
everything boil really well and cook for about 3-4 minutes or until the oil
starts to separate out.
Add the egg pieces to the prepared masala with the yolk side facing the masala. Sprinkle 1 tbsp of chopped cilantro and cook for about a minute on low flame.
Slowly
flip the egg pieces and cook for another minute and switch off the stove.
Finally
sprinkle 1 tbsp of chopped cilantro and serve it hot with roti/chapathi, whiterice, drumstick sambar or even with just any Pulav varieties.
Delicious
and tempting Egg Masala is ready to be enjoyed.
