This soya chunks curry is made with onion and tomato as curry base along with perfect blend of spices and potatoes. Method
Cooking
the Soya Chunks/Meal Maker
Boil
about 4-5 cups of water along with little salt in a saucepan.
Add the meal maker/soya chunks and let it boil for about 2-3 minutes and then switch off the stove. Keep it covered for about 5 minutes.
The soya chunks will double in size, now drain the water completely. Wash and rinse the soya chunks with fresh water at least 2-3 times and drain the water.
Let it cool down, squeeze the soya chunks well in between your palms.
Cooked
Soya chunks is ready, keep it aside.
To
Make Curry
Heat 2 tbsp of oil in a pressure pan/kadai. Add fennel seeds, cinnamon sticks, cloves, star anise, bay leaves and wait until nice aroma arises.
At this
stage add finely chopped onions, green chillies and little salt and mix well.
Saute
well until they change to golden brown color.
Add 2
tsp of ginger & garlic paste and saute well until the raw smell vanishes.
Add the washed curry leaves and give a good stir for about 20 seconds.
Add the
chopped tomatoes and saute well until they turn mushy.
Add the potatoes and saute well for about a minute.
Add red chilli powder, coriander, powder, turmeric powder, cumin powder and salt. Mix everything really well.
Now add the cooked soya chunks and mix everything really well.
Add
about 2 to 2.5 cups of water and give a good stir.
Let it come to rolling boil, add 2 -3 tbsp. of chopped coriander leaves to it.
Close
the lid and pressure cook for 2 whistles or if you are cooking in a kadai/sauce
pan close the lid and cook for about 15 minutes or until done.
After the steam releases open the lid and check the consistency and salt at this stage. Garnish it with chopped cilantro. If needed you can boil it for a minute and switch off the stove to adjust the consistency.
Delicious, healthy and quick Meal Maker Potato Curry/Soya Chunks Potato Curry is ready to be enjoyed.
Suggestions:
If you
feel the curry is very thin, then you can mix about 2 tsp of besan flour in ¼ cup
of water mix well without lumps and add it to the gravy.
But
after you add it mix really well and let it boil for about a minute or two and
then switch off the stove.
