Method
Heat 1
tsp of gingelly oil/nallaennai in a pan.
Add
Kollu/horse gram to the pan on low medium flame.
Saute the kollu for about 5-7 minutes until the nice aroma arises and will start spluttering.
Transfer
the roasted kollu/horsegram to a bowl.
Now add the dry red chillies and mix really well.
Add the
garlic cloves and roast along with red chillies until they change golden color.
Add the
tamarind to the pan, give a good stir and switch off the stove.
Add little water to the roasted kollu/horsegram and soak for about 10-12 minutes.
Let everything cool down completely.
Now drain the water out of the kollu and add everything to the mixer.
Grind everything together with asafoetida, required salt to a fine paste. Add required water and grind well.
Transfer
the ground Kollu Thogaiyal to a bowl.
Heat 2 tsp of oil in a pan, splutter cumin seeds, add urad dal and fry until they turn to golden brown, then add curry leaves and wait until they turn crispy. Now switch off the stove.
Add the tempering to the Kollu Thogaiyal.
Delicious and healthy Kollu Thogaiyal/Horse gram Thogaiyal is ready to be enjoyed. Serve it hot steam cooked rice and ghee or as side dish for idlis/dosais etc.
Suggestions:
You can
skip the garlic cloves and replace it with 2 inch ginger piece and make the
thogaiyal.
You can
also add about 2 tbsp of grated coconut to make this as chutney.
We can
also reduce some dry red chillies and add ½ tsp of black pepper and make the
thogaiyal.
