Here’s how to make Chilli Garlic Noodles with step by step photos…
Ingredients
Hakka Noodles |

Soya Souce |
2 tbsp |
Gingelly Oil/Sesame Oil/Nallaennai |
4 tbsp |
Garlic |
12-15 cloves finely chopped |
Dry Red Chillies |
6-7 |
Green Chillies |
4-5 slit & Cut |
Onion |
1 thinly sliced |
Green Beans |
8-9 thinly cut to long pieces |
Carrots |
2 thinly cut to long pieces |
Cabbage |
1 big cup thinly cut |
Capsicum/Bell Pepper |

thinly cut |
Black Pepper Powder |
1/2 tsp |
Red Chilli Sauce |
1 tbsp |
Vinegar |
1 tbsp |
Salt |
As needed |
Oil |
2-3 tsp for cooking the noodles |

Method
Boil
about 7-8 cups of water or enough water for the noodles to cook in a sauce pan . Add 2 tsp of salt and 2 tsp of
oil to it.
Let it
come to rolling boil. At this stage add the noodles to it and give a good stir.
Cook for about 6-7 minutes or according to the package instructions. When almost done [about 90%] cooked switch off the stove.
Drain the water using a colander. Rinse the noodles in cold running water.This will remove the excess starch in the noodles and prevent it from further cooking.
Add 1
tsp of oil to the noodles and toss well.
Transfer it to another bowl. Add 2 tbsp of soya sauce to the noodles and toss really well, until well coated and keep it aside.
Heat 4
tbsp of oil in a kadai/pan, add the finely chopped garlic.
Now add dry red chillies, green chillies and saute for about 10-15 seconds.
Add the
sliced onions, little salt and saute until they turn translucent.
Now add
the sliced capsicum/bell pepper, cabbage and mix everything really well.
