 Corn Pulav/Sweet Corn Pulav is yet another easy, quick and flavourful pulav variety which is a perfect meal for all age groups. The addition of corn kernels along with perfect blend of Indian spices further cooked with basmati rice and milk makes this rice unique and flavourful. Here’s how to make Sweet Corn Pulav with step by step photos…

Ingredients

Basmati Rice

2 cups [400 gms]

Onion [Big]

2 sliced

Green Chillies

10 sliced and cut

Ginger & Garlic Paste

2 tbsp

Corn/Sweet Corn

200 gms

Green Peas

½ cup

Cumin Powder

1 tsp

Garam Masala Powder

1 tsp

Boiled & Cooled Milk

2 cups

Water

1 cup

Cilantro/Kothamalli

4 tbsp finely chopped

Salt

As needed

For Tempering

Oil + Ghee

3 + 2 tbsp

Cinnamon Sticks/Pattai

2-3 Pieces

Cloves/Kitambu

4-5

Star Anise

1

Cardamom/Elachi

2-3

Cumin Seeds/Jeeragam

1 tsp

Black Pepper

1 tsp

Birinji Leaf/Bay Leaf

Method

Wash the basmati rice 2-3 times and drain the water.

Add enough water and soak for about 30 minutes.

Heat oil + ghee in a pressure cooker or heavy bottomed vessel. Add cinnamon sticks, cloves, star anise, cardamom, cumin seeds, black pepper, birinji leaf and saute for about 10-20 seconds or until nice aroma arises.


Now add the sliced onions, slit green chillies and little salt.

Saute everything really well until the onions turn to golden brown.

Add ginger & garlic paste and saute well until the raw smell vanishes.

Add the sweet corn kernels, green peas and saute everything for about a minute.


Add cumin powder, garam masala powder and sauté everything well another 30- 40 seconds.

Add 2 tbsp of finely chopped cilantro and saute well until the leaves shrink.

At this stage add 2 cups of milk + 1 cup of water and required salt. [Basmati Rice cooking ratio – 1 cup rice: 1.5 cup of water]

Let everything come to rolling boil.

Now add the washed and soaked rice, 1 tbsp of cilantro and let everything come to rolling boil.

Close with the lid and cook without whistle for about 15- 20 minutes. Make sure you open in between and give a gentle stir. Alternately you can pressure cook for 1 whistle.

Open the lid and give a gentle stir, perfectly cooked Corn Pulav is ready.

Finally sprinkle chopped coriander leaves and serve it hot with any raita for your choice [Onion Raita/Cucumber Raita etc] or along with any kurma variety of your choice.
