Method

Wash the mutton thoroughly 2-3 times and drain the water completely. Keep all the ingredients ready.

Heat 3 tsp of oil in pan/kadai, add sliced onions and fry really well until they turn golden brown or deep fry it to brown color.

In a wide bowl add the washed mutton/goat meat. Add red chilli powder, coriander powder, turmeric powder, black pepper powder, cuminpowder.

Then add yogurt, ginger garlic paste, cloves, cardamom/elachi, dry red chillies, salt, gingelly oil and curry leaves.

Finally add the fried onions to the mutton.

Mix everything really well until well combined.

Close and keep it refrigerate for at least for about 1 hour. You can marinate the mutton overnight also for added taste.

Heat 1 tbsp of oil in heavy bottomed vessel/kadai, add the marinated mutton along with all the masala.

Saute it really well for about 5-6 minutes.

Add about 2 cups of water and mix thoroughly.

Cover and cook the mutton until it softs, if needed add more water and cook thoroughly.

Stir in between to avoid it from getting burnt.

When all the water is evaporated and mutton cooked, it will be like  masala consistency. You can adjust the consistency as per your requirement.

At this stage add the finely chopped cilantro and mix really well. Switch off the stove.

Suggestions:

You can cook the mutton in pressure cooker for about 3-4 whistles and then saute it in little oil.
