Here’s how to make Kambu Murukku Recipe here…

Ingredients

Kambu Maavu/Pearl Millet Flour

1 cup

Rice Flour/Arisi Maavu

¼ cup

Besan FlourKadalai Maavu

¼ cup

Red Chilli Powder

1 tsp

Sesame Seeds/Ellu

1 tsp

Melted Butter

1 tbsp

Asafoetida/Perungayam

¼ tsp

Salt

As needed

Oil

For Frying

Method

Kambu Flour/Bajra Flour 

Sieve the rice flour and keep it ready. I have used homemade rice flour, you can check out the preparation of rice flour here.

Add kambu maavu/pearl millet flour, rice flour, besan flour to a wide bowl.


Then add red chilli powder, white sesame seeds, asafetida/perungayam and salt to the bowl.

Mix everything really well.

Melt the butter and keep it aside.

Add the melted butter to the flour and mix well until the butter is uniformly spread.

Add water little by little and mix the flour together to make soft pliable dough.

Grease the murukku press with oil and keep it ready.

Heat oil in a kadai for frying the murukkus.

Fill the murukkus press with dough and close it tightly. You can use star shaped achhu or plain 3 hole murukku acchu to make this murukku.

Check if the oil is hot enough by dropping very small piece of dough, if it floats on top immediately with a sizzle then the oil is ready. Press the murukkus on clean ziplocks or on a jalli karandi. 

Now transfer the pressed murukkus to the oil. You can also press the murukkus directly into the oil, but you need to be extra cautious.

Cook on both sides until the ‘shh’ sounds stops. Remove it from oil and drain it on a paper towel.

After the murukkus cool down, transfer it to an airtight contauber. These murukkus stays good for about 4 weeks.

Similarly make murukku with rest of the dough and store them for later.

Yummy, delicious, crunchy and super tempting Kambu Murukku/Pearl Millet Murukku is ready for neivedhyam or for evening snacks.
