Heat a
pan, add ½ cup of urad dal and dry roast it by stirring continuously.
Roast
the urad dal well until nice aroma arises and the color of the dal changes to
golden brown color. Make sure you roast it only on low medium flame, so that
you do not burn the urad dal.
Once it turns to golden brown color, switch off the stove and let it cool down completely.
Now
transfer the urad dal to a mixer and grind it really well to fine powder.
Add 4
cups of water to a pan/kadaai, along with a big pinch of salt and let it come
to a boil.
At this
stage add the ground urad dal powder and stir really well.
Make
sure it does not form any lumps and keep stirring continuously.
Let the
urad dal cook really well for about 10 minutes.
It will
turn in to thick porridge consistency. By now the urad dal would have
completely cooked.
Now add
the grated coconut and mix really well for about a minute.
Add the
Nattu sarkkarai/cane jaggery powder and mix really well until well combined.
Now add
¼ tsp of cardamom powder/elachi powder and ¼ tsp of sukku podi/dry ginger
powder.
Mix
everything really well and let it boil on low flame for 20-30 seconds and
switch off the stove.
