Ingredients
Dosa Batter |
2 cups |
Mudakathan Keerai |
1 handful tightly packed |
Green Chillies |
2 slit & cut |
Ginger |
1 inch Piece chopped |
Cumin Seeds/Jeeragam |
1 tsp |
Salt |
As needed |
Oil |
To make

Clean
the Mudakathan keerai and discard the stem.
Add the
Mudakathan keerai to a bowl, add enough water and wash it at least 2-3 times
and drain the water to get rid of any mud.
Add the
washed mudakkathai keerai to a mixer jar.
Then add green chillies, ginger, cuminseeds to the mixer jar.
Grind
everything to fine paste with little water and keep it aside.
I have used the dosa batter which I prepared at home and kept in refrigerator.
So
remove the batter from refrigerator and keep it in room temperature for at least
20 minutes. This will help in making dosas easily.
Now add
the ground Mudakathan Keerai Paste to the dosa batter and mix really well.
Adjust
the salt and consistency of the batter at this stage.
Heat a
dosa tawa, pour a ladle of batter and spread it to circle shape to make dosai.
Drizzle
oil all around the dosai and cook evenly
on both sides until done or as shown.
