Ingredients
Sooji/Rava/Semolina |
1 cup |
Yogurt/Curd [Sour] |
½ cup + 1 tbsp |
Onion |
1 big finely chopped |
Green Chillies |
3 finely chopped |
Ginger |
1 inch piece [finely chopped] |
Cumin Seeds/Jeeragam |
1 tsp |
Black Pepper corns |
1 tsp crushed |
Curry Leaves |
8-10 finely chopped |
Cilantro/Coriander Leaves |
1-2 tbsp finely chopped |
Salt |
As needed |

Take a
wide bowl, add sooji/rava, ½ cup of yogurt/curd and curd to it. Make sure the curd is sour.
Now add
finely chopped onion, green chillies, ginger, curry leaves, cilantro to the
bowl.
Add 1
tsp of cumin seeds, crushed black pepper corns to the bowl.
Now mix
everything really well. Add either 1 tbsp of curd or 1 tbsp of water to the
bowl and mix to make vadai mixture.
Mix the dough really well with your hands for about 40-50 seconds. This will helps in aerating the dough. The vadai mixture should not be too tight or watery. It will be thick, sticky and will hold shape easily.
Close
the bowl with a lid and let it sit for about 20-25 minutes.
Open
the lid and mix the vadai mixture thoroughly. Now the mixture is ready to make
vadais.
Heat
oil in a kadai to make the vadais.
Wet
your palms, make small ball, flatten it to round shape. Then make a hole in the
center.
Drop a
small piece of vadai mixture in to the oil, if it pops up immediately, then the
oil is ready to make vadais.
When the oil is hot enough, slowly slide in the vadais.
Cook
them on medium flame, equally on both sides until they turn to golden brown
color.
Drain
it out of the oil and transfer them to a bowl lined with kitchen towel.
Delicious, crispy and super tempting Rava/Sooji Vadai is ready to be enjoyed. Serve it hot as Evening snacks or even as side dish for breakfast along with Chutney and Masala Chai.
Suggestions:
To make
tasty Rava Vadai/Sooji Vadai use only sour curd.
I have
not added soda to make this vada, if you want it more fluffy then you can add ¼
tsp of baking soda.
Addition
of crushed black pepper is optional, you can skip this as well.
