Today, I am going to share an exotic, quick and healthy Vegetable Fajita that can be made in a jiffy. This is amusing and super tempting Vegetable Fajita [Pronounced as fahHeetah] is a Mexican delight. Fajita is a Mexican term or Tex- Mex for little vegetables stips, meat strips , grilled and served with Mexican Rice, Salsa, Guacamole, Sour cream and beans. The Fajitas are usually served sizzling hot in an iron skillet to our table in authentic Mexican restaurants. Here’s how to make Vegetable Fajita with step by step photos & Video

Ingredients

Onion

2 sliced

Garlic Cloves

6-7 sliced

Green Capsicum/Bell Pepper

2 sliced

Red Capsicum/Bell Pepper

1 sliced

Yellow Capsicum/Bell Pepper

1 sliced

Cumin Powder/Jeeraga Thool

1.5 tsp

Red Chilli Powder/Paprika

1 tsp

Black Pepper Powder

½ tsp

Oregano or Mixed Herbs

1 tsp

Salt

As needed

Oil/Olive Oil

1 tbsp

Lemon Juice

1 tsp

Cilantro/Coriander Leaves

1 tsp finely chopped for garnishing

Method

Wash the onions, peppers thoroughly. Slice them as shown in the picture and keep them ready. Peel the garlic, slice it and keep it ready.

Heat a cast iron pan, add 1 tbsp of oil. Add the sliced garlic and saute for about 10-15 seconds.

Now add the sliced onions and saute really well until they turn to golden brown color.

Add the sliced green bell pepper, yellow bell pepper and red bell pepper to the pan.

Give a god stir and add needed salt to it.

Keep stirring the vegetables on medium high heat for about 3 minutes.

At this stage add 1.5 tsp of cumin powder and 1 tsp of red chilli powder/paparika.

Mix really well and sauté for about 2 minutes.

Now add ½ tsp of black pepper powder, 1 tsp of oregano to the pan.

Add 2 tsp of oil, mix and sauté well for about a minute and switch off the stove.


Finally drizzle some lemon juice, sprinkle some chopped coriander leaves and enjoy.

Juicy, delicious, healthy and colorful Vegetable Fajita is ready to be enjoyed.

Serving Suggestions:

This Juicy Vegetable Fajita can be served as side dish along with Mexican Rice/SpanishRice.

You can make Corn Tortilla or Wheat Flour Roti, place the veggies inside and roll it into wraps and enjoy along with Guacamole and Salsa.
