Method
Wash the flattened rice/aval/poha with water
thoroughly and drain the water completely. You can use thin/thick poha to make this vadai, which ever is available. When using thick poha add little water along with yogurt to soak the poha.
Now add curd/yogurt to the aval/poha and mix really well and let it soak completely for about 10-15 minutes. Mix well with your hand to make a thick mixture.
Now add 2 tbsp of rice flour, to the aval and mix
really well. This is remove the excess moisture and makes the vadai crispy as
well.
Add chopped onions, green chillies, curry leaves,
ginger, cilantro to the aval mixture.
Add red chilli flakes, cumin seeds, required salt to
the mixture.
Mix everything completely well with your hand.
Make small balls and flatten it as shown in the
photo[similar to masala vadai].
Heat oil in a kadai, drop a small piece of aval
mixture to the oil, if it floats up then the oil is ready to make vadais.
Slide the flattened vadai into the oil slowly. Cook the vadai evenly on all the sides and changes to beautiful golden brown color.
Drain it out of the oil and transfer it to bowl lined
with paper towel.

they taste great without any side dish as well.
