 Zarda Pulav is a sweet rice recipe loaded with nuts and has bright yellow color. Zarda pulav originated from Persia where “Zard” means bright yellow color. But this delectable Zarda Pulav has found its way into the Indian Cuisine and is made during special occasions and festivals. Zarda Pulav is quite popular and common dessert in Pakistani cuisine. Here’s how to make Zarda Recipe with step by step photos…

Ingredients

Basmati Rice

1 cup [200 g]

Sugar

1 cup

Water

1.5 cups

Cashew nuts

6 chopped

Almonds

4-5 chopped

Raisins

2 tsp

Cloves

6

Cardamom

3

Saffron

Few strands

Food color [orange/Yellow]

One big pinch

Ghee

2 tbsp

Salt

One pinch

Method

Wash the basmati rice thoroughly with water 2-3 times and drain the water. Add fresh water to the rice and soak for about 30 minutes.

Heat about 1 tbsp of ghee in a pan/kadai or heavy bottomed vessel.

Add the chopped cashews, almonds and fry for few seconds, the color will start to change. At this stage, add the raisins and fry for few seconds or until they turn plumpy.

Remove the nuts and raisins to a plate.

Now add cardamom, cloves to the same pan/kadai and fry for few seconds or until nice aroma arises.

Add 1.5 cups of water to the kadai, add saffron and food color.

Let the water come to rolling boil.

Now drain the water from basmati rice and add it to the boiling water. Also add one pinch of salt to it.

Give a gentle stir, when the water comes to rolling boil, cover with the lid and cook on low medium flame for about 20 minutes.

Open in between and give a gently stir to avoid any burning.

After 18-20 minutes the rice is cooked well, if not cook for another 3-5 mintues.

Add 1 cup of sugar to the cooked rice and give a good stir. [The sugar will release some water but do not worry]

Then add about 1 tbsp of ghee and roasted nuts to the rice. Stir gently for another 2-3 minutes, the water will evaporate by now.

Cover and cook for another 5 minutes and switch off the stove.

Delicious, tempting and mouthwatering Zarda Pulav is ready to be enjoyed.
