Kavuni Arisi/Black Rice

Method

Wash the kavuni arisi 2-3 times thoroughly with water. Drain the water completely.

Add fresh water and soak the rice for about 6 hours.

After 6 hours, drain the water and add the soaked rice to the pressure cooker.

Add about 4 cups of water to the pressure cooker.

Close the lid and pressure cook for about 5 whistles.

Wait for the steam to release. Meanwhile grate the coconut and keep it ready, similarly grate/chop the vellam/jaggery and keep it aside.

The rice is cooked

Open the lid and let it boil for another 5 minutes.

When almost all the water is absorbed, switch off the stove. Now Mash the rice really well with a masher or matthu. The rice is completely cooked and mashed.

Switch on the stove, add the jaggery and mix really well.

Add the grated coconut, ghee, salt and mix everything really well.

Finally add cardamom powder and mix really well.

Stir really well and let it cook for about 2 minutes. Now switch off the stove.
