Method
Cooking
Dal and Rice
In a
bowl add rice and moong dal together, add water and wash it at least 2-3 times
and drain the water.
Now add
the washed rice and dal together to a pressure cooker.
Add about 5 cups of water to it.[Adjust the amount of water according to the rice variety, if you are using parboiled rice you can add 6 cups of water. Now add turmeric powder, required salt and asafoetida/hing to it.
Close
the lid and pressure cook the rice and dal for 3-4 whistles and switch off the
stove.
After the steam releases, open the lid and mash the rice well.
Add 1 to 1.5 cups of
water to the cooked rice mix well and keep it ready.
Making
Dal Kichadi
Heat about 2 tbsp of oil/ghee in a kadai or heavy bottomed vessel. Splutter mustard seeds and cumin seeds together.
Now add
curry leaves, followed by chopped ginger and chopped garlic. Saute them really
well for about 10-15 seconds.
At this
stage add the finely chopped onions, green chillies and little salt.
Saute
the onions really well until they turn translucent.
Now add
the finely chopped tomatoes and saute well until they turn mushy.
Add 1.5
tsp of red chilli powder and mix everything really well for about 20 seconds.
Add the
cooked rice & dal to the prepared masala and mix everything really well
until thoroughly combined.
If needed add little water and adjust the consistency accordingly.
Let everything
cook together on very low flame for about 3-4 minutes. Mix in between really
well.
Now add
chopped cilantro mix really well and switch off the stove.
Tempering
Heat 2
tsp of oil/ghee in a small kadai, splutter cumin seeds, then add ¼ tsp of red
chilli powder mix well and switch off the stove.
Finally
add the tempering on top of the Dal Kichadi.
Delicious,
healthy, protein packed Dal Kichadi is ready to be enjoyed. Drizzle some ghee
and serve it hot along with pappad or simple Potato Fry.
