how to make Garlic Tomato Chutney with step by step photos…
Ingredients
Shallots/Sambar Vengayam |

Tamarind/Puli |

Mustard Seeds/Kadugu |
½ tsp |
Cumin Seeds/Seeragam |
½ tsp |
Urad Dal/Ullutham Paruppu |
1 tsp |
Curry Leaves |

Method
Heat 3
tsp of oil/Gingelly oil in a pan/kadai.
Add 2-3
tsp of urad dal to the oil and saute well until it changes to golden brown
color.
Add the
dry red chillies and saute well for about a minute or until the color changes.
Now add
garlic cloves and saute well for about a minute on medium flame.
At this
stage add shallots/sambar vengayam, little salt to the pan and saute well until it changes
to light golden color or for about 4-5 minutes.
Now add
chopped tomatoes, required salt to the pan and saute really well until they
turn mushy. [You can also cover and cook the tomatoes for faster cooking].
Finally
add small piece of tamarind to the pan and saute well for about 30-40 seconds
and switch off the stove.
Let it cool down completely.
Add it to the mixer and grind it to fine paste and transfer it to a bowl.
Heat 2 tsp of oil in a small pan, splutter mustard seeds, cumin seeds, then add urad dal and fry for 15 to 20 seconds, add curry leaves fry for another 15-20 seconds and switch off the stove.
Transfer
the tempering to the ground chutney.
Delicious, tempting and flavourful Garlic Tomato Chutney is ready to be enjoyed. Serve it with steam cooked Idlis or dosas or rotis.
