 Green Gram Ladoo is protein packed healthy ladoo that can be made with just three ingredients. Green gram ladoo can be made either with sugar or jaggery. Here, I am going to share the healthy version of green gram ladoo made with ladoo. This ladoo is loaded with protein, fiber, iron and other vitamins and minerals. Here’s how to make Green Gram Ladoo with step by step photos…

Ingredients

Green Gram/Pacchai Paasi Payaru

1 cup [200 gm]

Jaggery/Vellam

¾ cup

Ghee

1 to 1.5 tbsp

Cashew nuts

8-10 chopped

Cardamom/Elachi Powder

¼ tsp or 4 whole crushed

Water

¼ cup

Method

In a pan/skillet add 1 cup of green gram and roast it on low flame. Keep stirring continuously until they change color.

Green gram changes its color to brown and pleasant aroma spreads all over. Now switch off the stove and let it cool down completely.

Add the roasted green grams into a mixer jar and grind it really well to a fine powder.

In a small pan add ¾ cup of jaggery and ¼ cup of water.


Mix really well and cook the jaggery melts and starts bubbling.

We don’t need any string consistency; we just need thick jaggery syrup. When the jaggery starts to bubble, switch off the stove. Filter the jaggery syrup for any impurities and keep it ready.

Heat 1.5 tbsp of ghee in a pan, add chopped cashew nuts and fry until they to golden brown color on low flame.

Now add the green gram powder and start mixing really well on low flame.

Stir well for about 2-3 minutes and switch off the stove.

Transfer this mixture to a bowl.

Now add the jaggery syrup. Mix really well with a spatula as the jaggery syrup is hot. Do not pour all the jaggery syrup at one time, add one ladle mix well then add more syrup and mix to get right consistency.


Add the elachi powder and mix really well.

Now the green gram laddu mixture is ready. Pinch a small amount of mixture and make small balls. Store them in air tight containers.

Delicious and super healthy Green Gram Ladoo is ready to be enjoyed.

Suggestions:

Green gram ladoo stays good for a week at room temperature.

Store the ladoos in air tight container.
