Urad dal Kanji/Ullundhu Kanji is super healthy, delicious, protein packed, iron rich kanji that can be served for breakfast or as evening snacks for kids. This Ulundhu Kanji is sweet version, I have already posted the salt of Black UradDal Kanji [Salt version] earlier. Ullundhu Kanji is given to girls when they attain puberty and throughout their teen age. Ullundhu Kanji is a must during this time because it strengthens the pelvic bone of the young girls and helps in strengthening the back and spinal cord. It is also an excellent source of protein, vitamins and minerals for pregnant women and old people. This dish is totally amazing it involves key ingredients, Urad dal which is loaded with proteins, Jaggery packed with Iron & Minerals, Coconut high in manganese which is essential for bone healthy and metabolism, it is rich in copper and iron which help form red blood cells and selenium an important antioxidant that protects the cells. Black Urad Dal Rice/Ulundhu Sadham/Ulundhu Soru/Karuppu Ulundhu Sadham with Ellu Thuvaiyal –Thirunelveli Special

Black Urad Dal Rice/Ulundhu Sadham is a traditional and authentic recipe of Thirunelveli District, Tamil Nadu. It is a very flavourful and protein packed rice variety that can be made very easily and quickly. This ulundhu soru is usually paired with Ellu Thuvaiyal/Black Sesame Seeds Thuvaiyal but it can be served with any spicy kuzhambuvarieties and appalam.This black urad dal rice is given to girls during puberty which helps in bone growth and strengthens the bone. Black Urad Dal Ladoo/Karuppu Ullundhu Urundai is a very tasty and healthy snack that can be made in no time with very less ingredients. My grandma used to make it for me and my sister when we were small and now I am making it for my girls. If you have girl child or women at home this is one recipe that you must know to keep them hale and healthy. You must ask me why? Here it is, Black urad dal is one of the richest sources of proteins and Vitamin B which is essential for women. It is loaded with iron, folic acid, calcium, magnesium and potassium which make this black urad dal a perfect health package for pregnant women.
 Another major ingredient in this urundai is jaggery. Jaggery we all know has numerous health benefits, its packed with iron and folate and prevents anaemia and boosts the hemoglobin level, helps in joint pain, is a wonderful blood purifier, controls blood pressure, prevents respiratory problems and is a wonderful alternative to white sugar. 

The third important ingredient is ghee. We all know ghee has incredible health benefits and is one of the treasured food in ayurveda. Ghee plays a vital role in balancing hormones and maintains a healthy cholesterol level. It is loaded with plenty of omega 3 fatty acids along with Vitamin A. Ghee is a good source of energy and one important thing to keep in mind is, it is a source of good fat, great for your heart and skin. Ullundhu Paal/Urad dal Milk/Urad dal Payasam/Urad dal Kheer/Health drink for Kids - Tamil Nadu Special

As a parent and mom of two kids I am always on the lookout of healthy and tasty food that can be made easily without any hassles. This Ullundhu paal/Urad dal payasam is one such recipe I came across in Vikatan long time ago. Ullundhu Paal is a special, traditional and authentic health drink prepared in Thirunelveli district of Tamil Nadu. It is a very healthy drink, prepared with milk and palm sugar. This Ullundhu pal is a must for girls and growing children as energy booster and helps in maintaining a healthy body and mind.  Do check out urad dal kali/urad dal halwa, yet another urad dal dish made especially for girls. A short note about the panam/panang kalakandu which is used in preparing this milk. Panang kalkandu is a kind of rock sugar made from panam pathaneer[Palm tree] which is extracted from the flower of palmera tree. For this month’s IFC challenge we are exploring Rajasthani cuisine chosen by Mrs.Manjula of Desi Fiesta. Thanks a lot Shobana, Saraswathi and Manjula for all the wonderful challenges.

Rajasthani cuisine or Marwari recipes is a splendid array of unique, rich, colourful, spicy curries and mouth-watering delectable sweets. This style of cooking, is not only the mirror of wealth and prosperity, but also reflects the traditional warrior lifestyles [the Rajputs] and the availability of ingredients in this water starved region. Food that last for several days was given more preference. Due to the scarcity of water, the cuisine involves use of milk, yogurt or buttermilk to wet the gravies. Instead of greens, they use different types of local berries. The use of lentils and legumes, mainly Jowar, Bajra and Gram flour in their food keeps the nutritional value very high. Once cooked, these most of the traditional Rajasthani vegetables can be eaten over days and don’t need refrigeration for weather condition over there keep the food good. For this month’s challenge Mrs. Manjula Bharat chose a royal festive spread of Rajasthani recipes and I chose to do few Moong dal Vadai, Missi Roti, Jaipuri Sabji for the challenge. Do check out other Vadai Varieties here.

Ullundhu Kali Recipe/Urad Dal Halwa Recipe/ How to make Ullundhu Kali with step by step photos & Video in both English & Tamil

Ullundhu Kali is an authentic and traditional dish of South India – Tamil Nadu. I am really sure all the girls from Tamil Nadu must be very very familiar with this ullundhu kali. The reason I say it is because this  ullundhu kali is given to girls when they attain puberty and throughout their teen age. Ullundhu kali is a must during this time because it strengthens the pelvic bone of the young girls and helps in strengthening the back. This dish is totally amazing it involves only three ingredients but loaded with proteins (urad dal), Iron & minerals (Jaggery) and vitamin E & Omega 6 (Gingelly oil). Even now the tradition of giving raw eggs and gingelly oil as a first thing in the morning for the first few days for the young girls during their first menstruation cycle continues in many families. They are considered to be very nutritious for the girls as they strengthen the uterus and prepare them for healthy child bearing later on in their adulthood. I still remember those days when I used to cry to eat the raw eggs so my grandma used to give boiled eggs, but I love gingelly oil.

Now coming back to Ullundhu kali, it must be made only with gingelly oil. Gingelly oil/Nalla ennai  is a cold pressed oil  derived from sesame seeds and has numerous health benefits. Cold pressed oils are produced through a combination of grinding and low heat without any addition of chemicals. Ongoing research also indicates that the rich presence of antioxidants and polyunsaturated fats could help to control blood pressure [source:Wikipedia]. Gingelly oil is called as “Nalla ennai” meaning “Good Oil” , so friends try to incorporate it in cooking as much as possible.

Thayir vadai is yet another delectable and my favourite evening snack. I love it so much I can finish off one whole plate in no time. The best part of thayir/curd vadai is, though the vadai’s are fried in oil, as they are soaked in water for about a minute and when squeezing out the water all most all the oil also comes out of the vadai and they become very soft. Masala vadai Recipe/Paruppu Vadai Recipe

A very yummy delicious masala vadai from my kitchen to your's. My kids love masala vadai, its crispy outside and crunchy inside.  Just give it a go, you will surely fall in love with this wonderful recipe. Do check out other Vadai Varieties here also checkout other interesting and tempting Starters/Evening Snacks/Appetizers here.

Ingredients

Channa Dal/Kadalai Paruppu

1 cup

Dry Red Chillies

3-4

Fennel Seeds/Sombu

1.5 tsp

Onion

1 big finely chopped

Green Chillies

2 finely chopped

Ginger

1 inch piece finely chopped

Garlic Cloves

4-5 finely chopped

Coriander Leaves/Kothamalli

3 tbsp finely chopped

Curry Leaves/Karuvepillai

10-12 finely chopped

Salt

As needed

Oil

For frying

 Preparation Time: 15 minutes                           Recipe Category: Starter/Evening Snack

Cooking Time: 20-25 minutes                            Recipe Cuisine: Tamil Nadu, India

Method 
Wash and soak the channa dhal for two to three hours. Drain the water completely and keep it aside. 



Now grind channa dhal, fennel seeds, red chillies to a coarse mixture, make sure you don't make it in to a paste. You should be able to see the dhal here and there. Transfer it to a bowl.


Now add finely chopped onions, green chillies, garlic,ginger, coriander leaves, curry leaves, salt to the dhal and mix them together.

Do not add water, you can sprinkle some water when grinding the dhal if you think it is dry.  It will look crumbly but you will be able to make vada's easily. Then make lemon sized ball out of the mixture, pat them on your palm to form a circle to medium thickness.




Heat oil in a pan and deep fry them until golden brown. Yes, now yummy yummy masala vadai is ready to be served.
